James Madison’s Colonial Apple Pancakes
James Madison loved simple, hearty meals, and apples were a favorite colonial ingredient. These fluffy apple pancakes are a fun and delicious breakfast treat that kids can help make!
Ingredients:
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup milk
1 egg
1/2 teaspoon vanilla extract
1 tablespoon melted butter (plus extra for cooking)
1 small apple, peeled and grated
Instructions:
Mix dry ingredients – In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
Mix wet ingredients – In another bowl, whisk the milk, egg, vanilla, and melted butter until smooth.
Combine – Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the grated apple.
Heat the pan – Melt a little butter in a pan or griddle over medium heat.
Cook the pancakes – Pour small amounts of batter onto the pan to make pancakes. Cook for about 2 minutes, until bubbles form on the surface, then flip and cook another 1-2 minutes until golden brown.
